It’s time to give pork a turn
PrairieFresh Prime® rotisserie pork loins showcased at Dairy-Deli-Bake Expo ’09

ATLANTA (June 6, 2009) — At this year’s IDDBA Dairy-Deli-Bake Expo in Atlanta, delis will find a new alternative to rotisserie chicken with PrairieFresh Prime® rotisserie pork loins. Seaboard Foods showcased the premium pork loins as a rotisserie oven item for delis seeking to tap into the expanding ready-to-eat meal category.

A unique patent-pending process allows the loins to cook up exceptionally juicy, tender and delicious in a rotisserie oven—something that has traditionally been challenging with today’s lean pork, which can be difficult to prepare and keep moist and tender after cooking.

These unique pork loin filets, which are a product of Seaboard Foods, cook relatively fast –an hour or less depending on the rotisserie oven–and will hold well for extended periods of time due to the PrairieFresh Prime® process.

“We’ve given deli operators a whole new rotisserie product with PrairieFresh Prime® pork loins. These can be an addition or alternative to rotisserie chicken in the deli case. This is a delicious cut of pork that’s super flavorful and juicy and is sure to please consumers when they take it home hot-and-ready to serve to their family and friends,” says Tom Blumhardt, Seaboard Foods vice president of marketing and value-added sales.

Seaboard Foods hand selects its finest grain-fed, farm-raised pork and then uses a patent-pending process which infuses the pork with exactly the right amount of intramuscular fat and lean pork protein. This allows the pork to baste in its own internal and external juices while turning in the rotisserie oven. With all the nutritional traits of lean pork, the result is a delicious old-fashioned roasted pork flavor – tender, juicy and flavorful just like eating the best cuts of beef.

Consumer panelists consistently rated PrairieFresh Prime® well above moderately juicy, whereas conventional pork rates a ‘slightly dry’ juiciness rating. Overall, PrairieFresh Prime® rated superior to conventional pork with 94 percent of the consumer panelists preferring the PrairieFresh Prime® samples.

“It’s time for delis to give pork a turn in their rotisserie ovens because this is unlike any other pork they have prepared,” says Blumhardt. “Consumers will love the rich, roasted flavor of these rotisserie pork loins.”
